Blueberry Pound Cake

We have friends that have been sharing their free-range eggs with us and I wanted to make something to take to them.  I found a Blueberry Pound Cake in the Calling All Cooks Three cookbook by Telephone Pioneers of America Alabama Chapter No. 34.  Here is the recipe:




Blueberry Pound Cake

2 Tbs butter, softened
1/2 cup sugar
1 cup butter, softened
2 cups sugar
4 eggs
1 tsp vanilla extract
2 cups fresh or thawed frozen blueberries
3 cups flour
1 tsp baking powder
1/2 tsp salt

Butter a bundt pan with 2 Tbs butter and sprinkle the 1/4 cup sugar around it, shaking out the excess.  Cream the 1 cup butter with the 2 cups sugar.  Beat in 1 egg at a time.  Add vanilla, flour, baking powder and then salt.  Fold in blueberries.  Spoon into prepared pan and bake at 325 degrees for approx. 1 hour  Cool in pan for 5 minutes and then invert onto serving plate.

This makes a great pound cake!
